Buffalo Chicken Quinoa Bites and Blue Cheese Dip

I have an obsession with buffalo sauce.  Just thinking about the spicy vinegar sauce makes my mouth water!  My sister-in-law is vegan, and she introduced me to quinoa (pronounced KEEN-WAH..I was corrected a hundred times when we were making this).  This recipe is a much healthier than normal buffalo chicken, it’s baked, and the blue cheese dip is made from yogurt.  It’s all quite delicious and great as an appetizer for a party or a light lunch.  My 4-year-old also LOVED them!

You will need:

1 cup cooked quinoa
2 cups shredded chicken
1/4 cup goat cheese
1/4 cup sharp cheddar
1/4 cup Frank’s Buffalo Wing Sauce (0 carbs, 0 fat, 5 calories!)
1/4 cup Panko breadcrumbs
1 egg
2 tablespoons flour
Salt and Pepper

For the dip:

1 cup Greek yogurt
1/4 cup blue cheese crumbles
1/2 teaspoon garlic powder
1/2 teaspoon  dried dill
1/2 teaspoon  dried parsley
Salt and Pepper

Preheat oven to 350.

Mix together all ingredients for the dip sauce in small bowl.  Cover and refrigerate.

Mix all of the buffalo bite ingredients together in a bowl and using a small cookie scoop, scoop 1 1/2 Tbls of mixture into a greased mini cupcake pan.  Place rounded side up in pan to retain the shape.

 Buffalo Chicken Quinoa Bites

 Bake in the oven for about 18 minutes.

Serve immediately with blue cheese dip and Enjoy!
