Cauliflower Crust Pizza

So, I am in another round of on again South Beach Dieting.  I love pizza though.. and I mean LOVE it.  I’ve seen recipes floating around for a cauliflower based crust.  Now, I am not a veggie lover.  In fact, I only recently started eating broccoli in the past few years.  Cauliflower though, bleh, not my thing.  So I have put off trying this out, but I am so glad I finally did!  I don’t want to fool you, you will know that it isn’t “real pizza”, but it IS a good alternative if you are watching carbs.

You Will Need:

1 head of cauliflower
2 eggs
1 cup shredded mozzarella
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
salt and pepper

Break apart 1 head of cauliflower into florets, rinse and drain well.  In a food processor, pulse the florets into rice size kernels.

Place the crumbles into a microwave safe bowl, cover with plastic wrap, and microwave for 8 minutes until soft.

Now comes the tricky, yet most important part.  You need to squeeze as much water as you can out of the cauliflower.  You’re thinking, but I didn’t use water to cook it, why is there water in it?  You will be surprised how much water you will get out of the cauliflower when you start squeezing!  The more you get out, the better your crust will be.

I took a loose weave cloth and a generous scoop at a time, wrung out the crumbles.  I probably reduced an entire head of cauliflower to a fist size ball of crumbles.  So SQUEEZE SQUEEZE SQUEEZE!  

In a bowl, mix your crumbles with all of the ingredients.  You can replace or add spices as you like as well.

Mix well.

Now, when I did this, I used a silpat on a cookie sheet.  I don’t recommend it.  The bottom of my crust didn’t get as crispy.  I would use parchment paper on a pizza stone, or a pizza pan.  

Shape your pizza into a crust shape.  You can do rounds or square.  Whatever you fancy.

Don’t put toppings on yet.  We’re going to prebake the crust.  Pop it in a 450 degree oven for about 15-20 minutes, or until the crust is browned.

Top with your favorite pizza sauce, and toppings.  Then put it back in the oven until the cheese on top of your pizza is browned and delicious!
