Quinoa has become one of my favorite ingredients to work with. I made Buffalo Chicken Quinoa Bites recently, but I wanted something that my kiddo would eat as well. These are so yummy and fun to eat, but packed with good stuff! I love making these in my mini cupcake pans, they end up perfectly kid sized. You can also make a big batch of these and freeze them for later! Did I mention these are super easy to make!?
You will need:
2 1/2 cup cooked quinoa
1 cup diced cooked chicken ( or 1 chicken breast worth)
2 cups broccoli, diced
1 cup yellow onion, finely diced
1 Tbls minced garlic
1 1/2 cups shredded cheddar cheese
1/2 teaspoon paprika
salt and pepper
Combine all ingredients in a bowl and mix well. Salt and pepper to taste.
Spray a mini muffin pan with non-stick spray and use a small scoop to scoop out the mixture into the pan. Bake at 350 degrees for 15-20 minutes. Serve immediately, or let cool and freeze for later! My batch yielded about 36 mini bites or 2 full mini cupcake pans worth.
