There are few flavors that scream CHRISTMAS to me more than peppermint! Peppermint and chocolate are one of my favorite flavor combinations, and what better way to enjoy them, than in ice cream!
Now, I know what you’re thinking. You need to go pull out the big ice cream churn, get some rock salt and ice, and… no, just stop there. This recipe does not use an ice cream churn! Yes! You CAN make deliciously creamy ice cream without an ice cream maker!
You Will Need
2 cups heavy whipping cream
1 cup sweetened condensed milk
2 tsp peppermint extract (or use your favorite essential oil)
3-4 drops red food coloring (optional)
1/4 cup crushed peppermints
1/4 cup semisweet or milk chocolate chips (whatever you have on hand, minis work great too!)
Use your mixer, or whisk by hand, and whip the heavy cream into stiff peaks. Fold in the sweetened condensed milk gently. You want to preserve those bubbles!
Now that you have your ice cream base, add in the rest of the ingredients and gently fold them in.
Pour into a loaf pan, cover with a lid or plastic wrap and freeze! I love these loaf pans, they’re perfect for making ice cream like this because of the lids!
Freeze for at least 6 hours and enjoy! This type of ice cream freezes pretty solidly, and melts easily, so feel free to scarf it down! That’s my excuse anyway…
