One of my favorite soups is Tomato Bisque, but I like to kick it up a bit with fresh basil and tortellini. This is a quick and super easy lunch idea, as well as a great way to stretch out a container of soup. You could make your own tomato soup for this but I am going for quick and convenient here.
You will need:
1 large container of tomato soup (any variety)
1/2 to 1 package frozen cheese tortellini
1 can stewed or diced tomatoes
salt and pepper to taste
You don’t HAVE to use fresh basil for this, but I did in this case because I really wanted to harvest from my rapidly growing basil plant! This is one of the few times I have ever tried my hand at growing my own herbs, and my little plant is flourishing. I think it’s from all the rain we have had lately! I try to water regularly, but the rain has been helping when I forget!
In a pot, combine the tomato soup, tomatoes, and tortellini. I actually did not use a whole bag of tortellini, I think half of a bag is fine. Chiffonade(roll the leaves together and slice into strips) the basil leaves and add to the soup. Be sure to taste your soup to see if it is a bit bitter. The canned tomatoes can sometimes give a bitter taste, if so, add a pinch of sugar. You also need to salt and pepper to taste. For a little kick, add a dash of cayenne! When the tortellini is cooked, your soup is ready!
