I absolutely love anything with buffalo sauce. These Buffalo Chicken meatballs are a healthier option for an appetizer rather than buffalo wings or dip. With ground chicken and egg whites, these are very low in fat while being full of buffalo flavor goodness! I personally use Frank’s Hot Sauce Buffalo Wings flavor for this recipe (and everything else buffalo) because it has no calories, fat, or carbs!
This recipe yielded about 3 dozen 1 1/2 inch meatballs.
You Will Need:
2 lbs lean ground chicken
2 egg whites
1/2 cup diced celery
2/3 cup buffalo sauce plus 1 cup for tossing in
1 1/2 cup panko bread crumbs
Preheat oven to 400
In a bowl, mix together all ingredients except for the reserved 1 cup buffalo sauce.
Shape into 1 – 1 1/2 inch meatballs on a sheet pan that has been sprayed with non stick spray or lined with parchment paper.
Bake for 20-25 minutes
Toss with reserved buffalo sauce and serve with light blue cheese or ranch dressing!
