Our Family Reunion was this weekend and I made a great Fall dessert for it. This is made similarly to a Chocolate Eclair cake. It was so good that the pan was scraped clean just to get that last tiny serving.
What you Need:
2 cans of Apple Pie Filling (no sugar added)
1 cup sugar
3 packages instant French vanilla pudding
4 cups milk
1 1/2 cup sour cream
1 1/2 containers frozen whipped topping, thawed
1 box cinnamon graham crackers
1 container caramel apple dip
Combine pudding mix and milk until smooth. Add sour cream and fold in the whipped topping.
To assemble the cake, line the bottom of a 9×13 inch baking dish with a layer of cinnamon graham crackers. Add a layer of apple pie filling (I use 1 can per layer). Top with a layer of the pudding (use 1/2). Repeat layers by starting with graham crackers, then apples and pudding. Add a layer of graham crackers.
Warm the caramel apple dip in the microwave oven until it is pourable. Pour this over the top layer of graham crackers and spread.
Refrigerate overnight before serving.
