I am trying to lower the amount of carbs I eat, but for someone who is addicted to all things carby, it is SO HARD! I have found a love for quinoa recently thanks to my vegan sister-in-law. Quinoa makes a great replacement for rice, and who doesn’t love chicken fried rice?
You will need:
1lb boneless skinless chicken breast
2-3 cups cooked quinoa
3 Tbls butter
2 garlic cloves minced
1 small onion diced
1 bag frozen peas and carrots (I also added some frozen corn)
1 tsp chili sesame oil
soy sauce to taste
Cube the chicken and cook in a large wok or pan, add the butter and saute the onions and garlic. Add in the cooked and cooled quinoa. Make a well in the center and fry the egg. Once cooked, stir into the rest of the quinoa. You can make this dish a bit healthier by substituting the butter with olive oil, but this is one dish I make with butter to give it that restaurant taste!
Add in your vegetables. The most common ones are peas and carrots, but you could add edamame, shredded cabbage, bean sprouts, corn, etc. Add the seasonings to taste and stir everything up until the frozen vegetables are heated through.
This recipe goes super fast if you already have the quinoa and chicken ready to go. It’s an easy and delicious meal!
