Here we are again with another quinoa recipe! I am loving it, if you couldn’t tell from my Chicken Fried Quinoa and Buffalo Chicken Quinoa Bites recipes. You could also use ground beef with this recipe, but I had chicken thawed out in the fridge.
You will need:
Olive oil
1 small onion, diced
1 Tbs diced garlic
2 1/2 cups cooked quinoa
1 1/2 cups shredded cooked chicken breast
1 can (15 oz) black beans
1 small can chopped green chiles
1 Tbs chili powder
2 cups enchilada sauce
1 1/2 cup shredded Mexican blend cheese (or pepper jack, etc)
salt to taste
Preheat oven to 350.
In a pan, cook the onions and garlic in olive oil until the onions are translucent. Add in the quinoa, chicken, black beans, chiles chili powder, enchilada sauce, and salt to taste.
Combine and heat through. Stir in 1/2 cup of the shredded cheese.
Pour into a casserole dish and cover with the remaining 1 cup of shredded cheese.
Bake for 10-15 minutes in the oven, then place under the broiler until cheese is bubbly. Serve and enjoy with sour cream, avocado, or my favorite, crumbled Cojita cheese.
