Cookies! Dark Mint Crackle Cookies! I needed to bake a few dozen cookies today to take to a meeting that the hubby and I have tomorrow. These seemed like the perfect ones to make. Who doesn’t love chocolate and mint?!
What you need:
Dark Chocolate Cake Mix
Cool Whip (1/2 container)
2 Large Eggs
3/4 bag of Andes Creme de Menthe Baking Chips
1/2 cup Confectioner’s Sugar
Preheat Oven to 350 degrees F
Yields 4 dozen
In a bowl combine cake mix, eggs, and thawed Cool Whip. Stir well to mix.
Add 2/3 bag of Andes Creme de Menthe Baking Chips and stir well.
My camera battery died at this point but you probably don’t need a photo of me
mixing in chips and eating the rest of the bag.
Dust your hands with confectioner’s sugar and shape dough into small balls (around 3/4″).
The dough will be very sticky and the sugar on your hands helps it not to stick.
Dust the dough balls with confectioner’s sugar before baking.
Bake 10 minutes or until cookies are set and tops have crackled.
Cool and enjoy!
