Easy Peach Cobbler

This easy peach cobbler uses a white cake mix!  I cannot begin to tell you how much I love this peach cobbler.   I make it for family and always end up converting them to this recipe.  It’s that darn good.  You could use any fruit you like, or a combination of fruit(peach and blackberry? hello!)  This does NOT last long in our house.

You will need:

1 box White Cake Mix
1 block cream cheese
1 stick butter
1/2 cup water
1/2 cup sugar
2 bags frozen peaches (you COULD use canned or fresh)
Cinnamon
Nutmeg

Preheat oven to 350.

Combine sugar and water in a pot on the stove and heat until syrupy.  Add frozen peaches and cook till slightly softened.  If using fresh, this may take a little longer.  If using canned, just pour out a little of the syrup from the can, you don’t need all of it.  Add a few dashes of cinnamon and a dash of nutmeg to peaches.

In a bowl, combine the cake mix, cream cheese, and butter.  This will take some elbow grease, but combine well.  You could use a mixer if needed.  Take pieces of the dough and flatten them out like biscuits, and place on top of peaches until everything is covered.

Once peaches are covered, bake in a 350 degree oven for 35 minutes.  Check topping for doneness.

Once done, let sit before serving.  It goes GREAT with vanilla ice cream!
