I’ve loved potato candy forever I think. My mom used to make it in the rolls with peanut butter. However, I found a new way to make it a little differently, and it ends up looking like little potatoes! They’re adorable! My 4 year old thought it was the funniest thing ever!
You will need:
4oz of cream cheese
1/4c of butter
1t vanilla extract
16oz package of powdered sugar
2 1/2c of sweetened shredded coconut
2Tbls of ground cinnamon (add more as needed for coating)
Mix the cream cheese and butter together in a mixer. My husband bought me a silicone tipped paddle attachment for my mixer. I love it! It scrapes the sides of the bowl as it mixes, which is a problem I always had with the regular paddle.
Add in the vanilla, then the powdered sugar. It is useful to have an assistant do this as you take pictures 🙂
The “dough” will be super thick and almost look like playdough. Pour the cinnamon onto a paper plate or other container to roll the candy in.
Shape the mixture into little potato shapes and roll in the cinnamon. We also experimented with cocoa powder as well and it actually tasted pretty good with the sweetened mixture!

Oh I love potato candy! Yum yum. I need to start making some St Patrick’s day foods, but so far haven’t had time. I can’t wait to eat my corned beef! My family is Irish(only 1st gen American here) and my hubs is not. He doesn’t like corned beef as much as we do!
