Low Carb Blackberry Cobbler

Those of us who live a low carb lifestyle need a delicious dessert sometimes. My local grocery has had some amazing blackberries recently which made me crave blackberry cobbler. I do not typically think of any cobbler as a low carb option so I set out to make myself a low carb blackberry cobbler. I added cream in it for a blackberries and cream feel. My husband did not think he would like it but was really surprised when I served it to him! I hope you try it and like it as well.

2.5 cups Blackberries
3 tablespoons plus 1 teaspoon Swerve (or your favorite low carb sweetener) for berries
3/4 cup Heavy Cream
2 cups almond meal/flour
3/4 cup+ softened butter
1 teaspoon cinnamon
2.5 teaspoons vanilla




Grease the bottom and sides of your pie plate with butter. Place berries in bottom of pie plate and toss with a teaspoon of sweetener. Pour 1/4 cup heavy cream over berries. Set aside.

Add almond flour/meal, 2 tbsp sweetener, butter, cinnamon, and vanilla to a medium size bowl. Cut together with fork until a dough is formed.

With your fingers, pinch together and place pieces of topping all over berries.

 Bake at 350 for 25 minutes or until lightly browned.

In a small bowl mix together 1/2 cup Heavy Cream with 1 tbsp of sweetener. Pour sweetened cream over individual servings.
