Low Carb Chili Con Carne

When it is cold outside I find myself craving chili. It is a favorite at our house and something that everyone actually eats! Yay, for not making multiple meals because of my picky children. Now that we are living a low carb lifestyle I have been making a low carb chili that is beanless and filled with meat.

Ingredients

  • 1 pound ground beef
  • 1 pound hot italian sausage
  • 1 medium yellow pepper diced
  • 1 medium white onion diced
  • 1 can petite diced tomatoes with green chiles
  • 3 tablespoons curry powder
  • 2 tablespoons chili powder
  • 2 tablespoons smoked paprika
  • 2 1/2 tablespoons cumin
  • 2 tablespoons minced garlic
  • 1 tablespoon coconut oil
  • 1 tablespoon butter
  • 1/2 tablespoon onion powder
  • salt
  • ground black pepper

Instructions

  • Melt butter and coconut oil in a medium skillet.Add onion, peppers, and minced garlic. Saute until onion and peppers have softened, stirring often.
  • In a dutch oven (or similar pot) add italian sausage and ground beef.
  • Cook meat until browned, add salt and pepper to taste.
  • Stir the onions, peppers and minced garlic in with the meat.
  • Add canned tomato, onion powder, smoked paprika and chili powder.
  • Simmer together for 15 minutes, stirring often.
  • Add curry powder and cumin.Simmer an additional 45 minutes.

If you like a spicier low carb chili you can add more curry powder and cumin.

I like to serve with shredded cheese (make sure to shred your own as packaged shredded cheese contains a lot of carbs), sour cream and whisps on the side!
