Low Carb Mediterranean Turkey Meatballs with Homemade Tzatziki

If you love the Mediterranean flavors of spinach, feta, and sun dried tomatoes, this is for you. Going low carb is easy when there are so many yummy options, his is one of my favorites. I love all of these flavors and the homemade tzatziki puts it over the top!

You will need:

2 lb ground turkey
1 package frozen chopped spinach (thawed and drained WELL)
8 oz crumbled feta
1 medium onion minced
1/4 cup sun-dried tomato pesto or diced(optional)
4 cloves garlic minced
Oregano
Salt/pepper
3 Tlbs olive oil (binder)

Combine all ingredients in a large bowl.

Roll into balls and bake on a parchment paper lined sheet pan at 400 for 25 minutes or until they reach an internal temp of 165.

For the Tzatziki:

1 large English cucumber (diced or grated)
3 cups Greek Yogurt
Juice of one lemon (or 3 Tlbs)
1 Tlbs fresh Dill
Salt/Pepper to taste

Peel the cucumbers and finely dice or grate. Sprinkle with salt and let sit to draw out the moisture. After about 30 minutes, use a couple thick paper towels or cheesecloth to wring out the cucumber of as much water as you can.

Mix all ingredients in a bowl, cover and refrigerate for a few hours to let the flavors meld together.
