Pumpkin and Caramel are two of my favorite things in the Fall. A couple weeks ago I decided to combine my loves into Pumpkin Caramel Chocolate Chip Bread. Oh my, this was SO good that even my non pumpkin loving hubby enjoyed it. Plus the caramel sauce recipe makes more than needed for the bread which means I had delicious caramel sauce in my refrigerator for a few days after!
What you need for the bread:
1/2 cup butter
1 cup sugar
1 1/4 cup pumpkin puree
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 Package (9 oz) Nestle Chocolate Chips with Caramel Filling
Cream together butter and sugar. Add pumpkin and vanilla. Mix flour, baking soda and salt together and add to creamed mixture. Stir in chocolate caramel chips. Pour into greased pan and bake at 350 for 60 minutes. Cool completely before adding Caramel Sauce
What you need for the Caramel Sauce:
3/4 Cup Granulated Sugar
2 1/2 Tablespoons Water
1/2 can (6 oz) evaporated milk
Combine sugar and water in a heavy saucepan and stir over low heat until sugar is dissolved. Increase heat to medium-high. Boil without stirring until sugar is light amber colored and starts to smell like caramel (about 5 minutes) Remove from heat and slowly add evaporated milk. It will get frothy and the sugar could clump. Simmer over medium-high heat stirring frequently until it becomes smooth, caramel colored and thickened (about 15 minutes). The sauce will thicken more as it cools. Pour into a glass bowl to cool. Pour over bread while thin enough to pour. If it gets a little too thick warm up to pour.

Well. That looks ALL KINDS of delicious. I love all things pumpkin and I also love caramel, so it’s a win/win for me! Now, I wonder if I can restrict myself to just a small slice?

That sounds fabulous! I’d probably swap out a few ingredients, mostly use a gluten free flour and wild honey … looking forward to giving it a try
This reminded me that I need to buy a bunt pan. Very few ingredients that I do not have, definitely want to try this. I will need to pick up the puree though. Perfect for Fall.

omgosh jaw has hit the ground and I’m drooling. Definitely going to make this when we get into our new home with a decent oven that can actually bake at the right temp!
