So, confession here, I am a total weirdo. I do not like tomatoes. One of my favorite foods to eat way too much of is salsa. Go figure. I don’t like raw tomatoes, but combine with some lime juice, onion, jalapeno, and cilantro and it is amazing! I love restaurant salsa like Chuy’s and Chili’s. I’ve attempted to recreate those yummy salsas at home, and this is pretty close!
You Will Need:
3 cans whole peeled tomatoes (see notes)
1/2 small yellow onion
1 fresh jalapeno, seeded
3 cloves garlic
2 tsp mild or hot green chiles
1/2 cup fresh cilantro
2 Tbls fresh lime juice
1 1/2 tsp cumin
2 tsp sea salt
1 tsp sugar
Drain the juice from 2 of the cans of tomatoes and reserve. Place all ingredients in a blender or food processor. I love my Ninja Kitchen System! Be careful with the blades, though. They’re so sharp, I gave my finger a good slice while making this batch for the blog!
Blend to desired consistency. You can add in some of the reserved tomato juice if it’s too chunky. Pour in container and chill for at least a couple of hours to let the flavors meld. Easy Peasy!

Just wondering about how many tomatoes if we are using fresh tomatoes rather than canned? 🙂
Hrm, I would say there are about 5 peeled Roma tomatoes in each can, or close to 1lb for ONE 14oz can. So for my recipe, you’d need about 15, or close to 3 lbs. It that is too many, you could reduce the recipe. This recipe makes a large batch.
