Around here, we LOVE breakfast. I think the 4 year old would have it for every meal if we’d let him. He loves basic sausage and eggs, but mom and dad get tired of the same old thing every time! I had a few cans of biscuits in the fridge that I needed to use, so I made Sausage Egg and Cheese Pockets! This recipe is super easy to do, and you can even let the kiddos help!
What you need:
1lb Your favorite sausage
1 can biscuits (I like the Grands size!)
7 eggs
Your favorite cheese (We LOVE Cabot cheese)
Brown the sausage and drain very well.
Add in the eggs and stir to scramble.
Once the eggs are cooked well with the sausage, take a piece of parchment paper and spread out a single biscuit like a mini pizza. (This technique is great with pizza ingredients too!)
Scoop a good amount of the sausage and egg mixture onto the biscuit and top with a generous amount of cheese. Mmmm….cheese..
Carefully stretch out the sides and fold over the top. Like swaddling a baby! Try not to rip the biscuit, as you don’t want anything leaking out when they bake. Leaky breakfast pockets are no fun!
Once completely closed, pinch the seams to seal and flip over onto a baking sheet. Seam side down! I use parchment paper to line my baking sheets. It makes cleanup easy and no sticking!
I like to sprinkle garlic salt from a grinder on top of my pockets once they’re all done. It really kicks up the flavor of the biscuit!
Insert into a preheated 350 degree oven and bake for about 13-15 minutes until golden brown and yummy! Keep an eye on them as you don’t want them to get too dark!
Enjoy with a nice cold glass of orange juice!
You can make these even yummier by dipping them in sausage gravy!

I think you can, but my only concern would be the texture of the biscuit. Of course they would taste better fresh from the oven, but freezing is an option!

We often have pizza dough around. Wonder if this would work with pizza dough instead of biscuits. Sounds delicious. (And yes, I love Cabot, cheese also. I could eat a whole brick of it myself!)
I think so! The texture would just be different, less pillowy as biscuits, but still yummy!
This is genius! They seem like they could easily be an on the go breakfast – and if you cooked the meat up the night before it would be so quick to bake them even.

These look good. Much healthier option than those frozen ones on the market. I don’t do well when enclosing food into a flour pocket. I learned that when making my mothers empanada recipe. But would like to give these a try.
